Chicken casserole

I have a conical cast iron casserole dish, the base of which fits perfectly into the circle. I cook quite large chickens in it (1.7 kg). I also use the large hollow pan Ø26 cm. In the pan, I cut the string and open the chicken's legs Mexican-style. It’s important that the lid closes well to retain heat.
A smaller chicken (1.2 kg) will fit into the 3 way pot. Here in the photo it is a Colombian chamba, which is a clay pot (the lid is not a tight fit, which slowed down the cooking). No water, oil, or salt, just thyme (or your favourite herbs), sometimes a cut fruit; the chicken will produce its own juices, brown on top, while remaining tender.
It's time to use the viewfinder to anticipate the sun, with a bit of experience you'll be able to orient the SUNplicity just once, and it will cook for almost 3 hours autonomously., After 3 hours, the chicken will remain warm for another hour, ready to serve.
