Rosemary Sausages

 What a pleasure to escape the barbecue smoke, and to forget to keep an eye on it!
Certainly the sausages will take a little longer to cook, but remaining very tender they will have a reinforced SUNplicity flavour… avoid very salty sausages, as the cooking concentrates the flavours.
 Preheat the frying pan or cast iron griddle, under a glass lid, for a good quarter of an hour. This will allow you to sear the food right from the start of cooking... do not overload your pan.
 If your sausages produce too much juice, you can use it separately to cook rice; don't hesitate to drain it. You'll need to keep an eye on it and turn it towards the end of cooking to distribute the browning according to the illuminated areas; you can decide to tilt the dish according to what you see, not according to the viewfinder.
